What we eat can be an ally or a saboteur of our mind. Although we usually relate junk food to weight or the heart, science now points to a new organ that is a victim of excess ultra-processed foods: the brain. An American study has just revealed how certain everyday consumer products alter cognition silently and profoundly.

The brain, the new victim of ultra-processed foods

The expression “junk food” is usually associated with obesity, cholesterol or digestive problems, but research published in the American Journal of Clinical Nutrition changes the focus. Scientists at Virginia Tech University analyzed the effect of ultra-processed foods on cognition and determined that their impact can be equivalent to several years of brain aging.

The study warns that diets loaded with saturated fats, added sugars, salt and additives not only affect the body, but also the mind. These compounds generate inflammation, oxidative stress and alterations in communication between neurons. According to lead researcher Ben Katz, “a diet high in ultra-processed foods is associated with poorer cognitive performance and early changes in the brain.”

How these foods affect your mind without you noticing

The mechanisms behind this deterioration are varied. Excessive fast sugars alter the brain environment and reduce its plasticity, affecting learning and memory capacity. Trans and saturated fats directly interfere with neuronal functioning, making communication between brain cells difficult.

In addition, preservatives and additives can aggravate brain inflammation, affecting the blood-brain barrier, that layer that protects the brain from external toxins. Together, these effects double the risk of premature cognitive decline, according to the team’s findings.

The five worst foods for your brain

The analysis compared different groups of ultra-processed foods, their frequency of consumption and the effects on memory, attention and mental speed.

The results leave no doubt: there are five categories that are especially harmful to brain health.

1. Industrial pastries (donuts, croissants, cakes): a dangerous mixture of refined sugars and trans fats.

2. Soft drinks and sugary drinks: they cause glucose spikes followed by abrupt drops, affecting executive function.

3. Ultra-processed salty snacks (fries, chips, crackers): high in harmful fats and salt, poor in nutrients.

4. Fast foods (burgers, nuggets, fried foods): they combine excess salt and fat with an alarming lack of fiber.

5. Sugary breakfast cereals: Although they are promoted as “healthy,” their sugar and additive content impairs concentration.

Participants who ate these foods more than four times a week showed cognitive decline similar to aging over several years, even considering factors such as exercise, education, or smoking.

How to reverse damage and protect your mind

Researchers point out that there is room for action. Reducing the frequency of consumption of ultra-processed foods is the first step. Replacing industrial pastries with fruits and nuts, soft drinks with sparkling water and lemon, and snacks with natural options can make a tangible difference.

They also recommend maintaining a regular physical activity routine, getting enough sleep, and reading product labels: the fewer additives, trans fats, and “hidden” sugars, the better. Each food choice is, deep down, a decision about the future of our mind.
